We absolutely love tacos, burritos AND enchiladas.

Taco night is a regular occurrence in our household mainly because they’re quick, filling and easy to make. You can serve vegetarian taco toppings in a myriad of ways so I put together a quick list to inspire your next taco night. 

Veggies

Served roasted, sautéed, grilled or raw (depending on the veggie).

Tomatoes
Cucumbers
Sweet potatoes
Carrots
Corn
Green, red or orange peppers
Squash
Zucchini

Mushrooms
Jalapeno, fresh or pickled
