Pimento cheese marks the beginning of warmer weather for us down here in the south. And what better way than to make it using cheese from NC based Ashe County Cheese found at the NC State Farmers’ Market. Pimento cheese tastes great as grilled cheese sandwiches, served as a burger topping or simply served with crackers and veggies. There’s so many options so have fun exploring them all.

6 oz sharp cheddar cheese, shredded
6 oz pepper jack cheese, shredded
1 chipotle pepper, diced
1 teaspoon chipotle pepper sauce
½ cup Greek yogurt
¼ cup sour cream
½ jar pimentos, drained
1 cup cilantro, chopped
Using a food processor or box cheese grater, shred cheese. Place all ingredients into a large mixing bowl and using your hands gently combine. Keeps in refrigerator for up to one week. Serve cold.
