Green Tomato Pineapple Salsa

Green tomatoes are very popular in the south. And what better way to use leftover maters than to make a salsa with fresh pineapple. It’s quick and easy to put together, and refreshing on a hot day.

Makes: 4 1/2 cups
Prep Time: 10 minutes

2 cups fresh pineapple, chopped
1 ½ cups green tomato, chopped
1 cup red pepper, chopped
1 teaspoon cumin
1 teaspoon kosher salt
2 garlic cloves, minced
2 tablespoons Cilantro Chutney
½ orange, juiced

In a large mixing bowl, combine all ingredients and stir well. Serve cold with tacos, enchiladas, or burritos. Keeps in refrigerator for 2-3 days.
