We’re just under a week in of eating vegan and the hardest part so far is figuring out what’s for breakfast. Usually we would have yogurt with fruit, granola and maybe some nuts. That was my go to breakfast during the week because it’s fast to package in the mornings, filling and healthy. Sure I threw in just oatmeal with cinnamon and sugar or a granola bar, usually a “lara” bar, or a smoothie/juice, but now I’m perplexed. (Weekend breakfasting is much easier because I have more time to prepare.) This two person family can only eat so much oatmeal and fruit day after day.
So I ask you, what does a vegan eat for breakfast during the week?
